Kadai Bhindi Masala...

Hope you are all doing great...Enjoying life and of course making great meal everyday to feed your mind ,body and soul ...Weekend i had great time visiting nearby framers Market...Got lots of fresh Veggies and fruits...in other two days my in-laws are coming so i did end up buying lots of veggies for the coming week...i have lots of healthy new recipes coming up so please keep following me ;)...OK here i go with Yesterday's Specialty recipe Kadai Bhindi:)

Ingredients

Medium size Bhindis
1 large finely sliced onion
1 large tomato
3 cloves of Garlic
1 inch Ginger
1 Green chili
5 Almonds soaked for about an hour
1 Tsp Jeera
1 Tbsp Oil

For Stuffing

1 Tsp of Coriander powder
1 Tsp of Jeera powder
1 Tsp of Turmeric powder
1 Tsp Chili powder
Salt as per taste

Method

Wash,dry and slit Bhindis and fill in with all dry spices.

Next grind almond,some part of sliced onion ,tomato,green chili,ginger and garlic into a smooth paste

Heat Oil in a kadai and add jeera followed by bhindis.

Cover for a while and cook on low flame and toss bhindi for ever 5 mins until cooked on all sides.

Open Cook for a while until all steam evaporates.

Take out bhindis once done.

To same kadai add in sliced onion and fry till they are translucent.

Add in the Paste and cook till oil separates.

Later add  bhindis and cook till its well coated with masala 

Garnish with coriander leaves and serve hot.

Note- I also used stem part of coriander leaves while grinding paste.Also if you want more of a creamy gravy consistency you can add some curd or cream.

Leftover Makeover...Kothu Paratha!!!

Today I made kothu paratha...We had some frozen/ ready-to-make wheat parathas leftover from our trip two long weekends ago. I usually don't buy frozen roti/ paratha, but my hubby got this to make our cooking easy. The pack contained some 20 parathas left uncooked and I wanted to get rid of them - what best dish than making kothu paratha...(Wah Wah!) 

This is a wholesome dish which is so versatile that any combination of veggies can be added to this along with eggs, leftover rotis/ chapatis and mix veg korma....i made veggie version sans egg for hubby but I should say - with egg tastes better than without.


Ingredients:

3-4 Leftover Parathas (Shredded to bits)

1 Cup of Veggie Mix (Capsicum, carrot, corn, broccoli)
1 finely sliced onion
1 green chilly slit
Few Mint leaves
Some Veggie korma
Coriander leaves to garnish


Method:


- Heat some oil in a big skillet and add the sliced onion and green chilly slits

- Saute Onion till they are translucent
- Add all the veggies along with korma
- Last add-in the paratha bits and toss it with the korma veggie mix
- Nicely mix all the Ingredients and serve hot with raitha of your choice

Note:  You can add eggs along with all other ingredients for some extra taste

Quinoa Beet Idli......

Hi Friends,


Today want to share this wonderful light healthy Quinoa Idli...This tastes similar to Rava Idli that we make...I added some Flax-seeds and Beetroot for some extra health benefits.Any combinations of greens and veggies can be added according to your liking.




Ingredients

1 Cup Coarsely grounded Quinoa

2 TBSP of Flax-seeds
2 TBSP of Semolina(Sooji)
1/2 Cup of grated Beetroot
1/2 Cup of Curd
Salt to taste
Grated Ginger
1 finely chopped Green Chilies
1 TSP of Eno

Method

Heat some oil and make tempering with mustard,ginger,green chilies and Asafoetida .



To this add grated Beet root coriander leaves.

Switch off flame add grounded Quinoa,flax seed and Sooji.

Let the Mixture cool.

To this add curd ,Salt and required water.

Let it rest for at least for half an hour.

Add Eno to the batter before steaming the Idlis.
